We visited an agrotourism initiative, the El Gallo ranch. The older groves have more than ninety years of production. 90 years, that’s what sustainable agriculture looks like. It delivers the most remarkable olives in Chile: the Aceituna de Azapa (Azapa’s olive) with a strong local link. The farm has a beautiful garden where we took this marvelous picture. Perfect example of “the eternal spring”.
